I use Microsoft Visio for most of my diagrams. Sometimes, I use Adobe Illustrator when more custom graphics are required.

I did a lot of network diagrams for two companies. I obviously can't show the entire diagrams for security reasons, but here are some examples...

This is a diagram of how the internet was connected through the firewalls. I have removed the IP addresses for Security reasons.

This shows how routers were physically arranged in the building.

There were many, many diagrams of the Servers, which all included Serial numbers, server names, IP addresses and pictures of the exact model of server, as they were laid out on the rack.

Another thing I do is procedure documents. These procedures make it easy for novice users to understand how to use a new system through screenshots. In many cases, users can follow these procedures themselves without input from the IT team.

networking

I do have a lot of experience in computer networking. I have set up small business networks, and diagrammed large corporation networks.

A recent example is the network at Just Cruises. It is a basic ethernet network, but the computers are all set up to use a "to do" program that is kept on a shared network drive. A central database of customer information is also kept centrally on an internal network share. The whole network is protected from the outside and the inside with secure passwords, and there is a backup plan set up.

My home is also set up with a wired/wireless network. Three Windows PCs are wired to the central switch. An Apple iMac and an HP tablet PC are connected via 802.11G Wireless, for use around the whole house. The wireless connection is protected by a 128 Bit WEP password.
